The Best Balsamic Chicken, Bacon, & Avocado Sandwich

How many of you love sandwiches? Me too! That’s why I was so happy when I took a bite of this balsamic chicken sandwich. This recipe was inspired by the Rivera sandwich from La Madeline. I had it when I was in Virginia and was completely obsessed. Well, that was until I didn’t have access to the original any more and had to make my own. Not to toot my own horn, but I’m pretty sure mine is better! The tang from the balsamic chicken, salt from the crispy bacon, freshness from the avocado, and creamy pesto mayo, all on a crispy baguette. It’s the perfect meal really. The best chicken, bacon, and avocado sandwich

Make the balsamic chicken

The first thing you’ll want to do is make the balsamic chicken. You can find that recipe here! It can take anywhere from 2-24 hours to make it depending on how long you let it marinade for, so it’s up to you!

Fry the bacon

Everyone likes their bacon a little differently. Personally, I like to cut the strips of bacon into small pieces and fry it that way, but if you prefer strips, that’s totally fine. Cook it on the stovetop or in the oven, up to you!

Other bits

Here’s where you make the pesto mayo. I usually eyeball this step, but I’d say it’s 1/4 cup of mayo and 2 tablespoons of pesto. Mix them together.

This is just a bonus, but if you want to, put your baguette in the oven to warm it up and toast the top a little bit.

Assemble the sandwich!

Once everything has cooled, it’s time to assemble! Slice your bread in half and to the bottom half add your lettuce, thinly sliced balsamic chicken, and bacon pieces or strips. On the top half, spread a generous layer of pesto mayo and smashed avocado. I usually use half an avocado per sandwich. Put the two together and enjoy!

Ingredients
  • 2 Balsamic roasted chicken breasts Linked above in the post
  • 1 Large baguette
  • Romane lettuce
  • 1 pound Bacon
  • 2 Avocados
  • 1/4 cup Mayo
  • 2 tbsp pesto
Instructions
  1. Cook the balsamic chicken breast. Again, I've linked the recipe above in the blog post.

  2. Cut your bacon into small pieces. Fry them in a large pan until crispy. Let drain and cool of a paper towel.

  3. Mix the mayo and pesto in a small bowl, set the the side for later.

  4. If you want to, toast the baguette to your desired crunchiness! You can skip this step if you want to.

  5. Once everything is cooled, slice the chicken into thin slices. Cut the baguette into 4 sandwiches and slice them in half.

  6. On the bottom half, layer with lettuce, balsamic chicken, and crisypy bacon.

  7. On the top half spread a generous amount of pesto mayo and top with smashed avocado.

  8. Top the bottom pieces and enjoy!
