The Most Delicious Grown-Up Grilled Cheese With Veggies

Everyone likes a classic grilled cheese, right? I thought so! But what about a grown-up grilled cheese? One week I had my Hello Fresh order come in and I was skeptical, yet very intrigued by this sandwich. Veggies in a grilled cheese? I wasn’t too sure. Then I tried it and my life was changed! It was still gooey from the cheese, savoury from the veggies, and creamy from the garlic basil mayo. It was to die for! So that’s why I’m sharing it with you today! Keep reading to make the best grilled cheese of your life!

P.s. This can be made vegan, just use vegan mayo, cheese, and butter!

This elevated grilled cheese is filled with gooey mozzarella, roasted red peppers and shallots, and a creamy garlic basil mayo. YUM!

Ingredients
  • 2 Slices Sourdough Bread
  • 1 Bell Pepper I like red or yellow
  • 1 Shallot
  • 1/2 Cup Mozzarella
  • 2 1/2 tsp Balsamic Vinegar
  • 1/2 tsp Garlic Powder
  • Fresh Basil Leaves
  • 2 TBS Mayo
Instructions
  1. Preheat your oven to 425℉

  2. Chop basil and add to a bowl with mayo and garlic powder. Add salt and pepper to taste. Set aside, in the fridge, to let the flavours marinate.

  3. Half the bell pepper lengthwise and remove the stem and seeds.

  4. Peel, halve, and slice the shallot. Put shallot slices onto a piece of tin foil with a drizzle of olive oil, balsamic vinegar, salt and pepper. Fold into a little packet.

  5. Place the bell pepper, face side down on a baking sheet with a drizzle of olive oil and S&P. Place your shallot tinfoil packet on the tray as well.

  6. Roast in the oven for 15-20 minutes or until they are browned and tender. Place pepper and shallot on a cutting board and finely chop.

  7. Take two slices of sourdough and spread butter on the outside sides of the bread. On the other side of one, spread your pepper and shallot mixture. On the other slice spread on your basil mayo and mozzarella cheese.

  8. Cook on medium heat until the cheese has melted and the bread is brown and toasty.

  9. Cut in half and enjoy!

Prepare your veggies!

Let’s get cooking, shall we? The first thing we need to do is to cook your veggies. That’s what makes this a grown-up grilled cheese.

Start by preheating your oven to 425℉ and lining a baking sheet with tin foil. You can totally skip this step but I think it’s easier to clean up that way.

Slice your bell pepper in half, lengthwise, and remove all the the seeds and the stem. You can choose any bell pepper but I recommend using a red or yellow one.

Slice your shallot in half, peel it, and slice it. Then, using a piece of tin foil, create a packet to put the shallot, vinegar, salt, and pepper in. Close it up so nothing leaks out!

Place your pepper and shallot packet onto the baking tray and bake for 15-20 minutes or until your pepper is browned and soft. Set them aside on a cutting board to cool down a little before you finely chop them.

Garlic Basil Mayo

This is one of the best parts of this grilled cheese! It’s creamy and so delicious. Feel free to make this ahead of time so the flavors have time to marinate together.

Start by chopping up the basil. I didn’t give a specific amount because I want to leave that up to you. A couple leaves should do it though.

Mix your basil in a bowl with mayo, garlic powder, salt and pepper. It’s that easy!

Assemble, cook, and eat!

Now that your ingredients are ready, it’s time to assemble and cook your grilled cheese!

As I’m sure you know, the bread of grilled cheeses have an inside side and an outside side. Spread butter on your outside sides.

Now for the inside! Spread one slice of bread with your pepper and shallot mixture. On the other, spread a generous amount of your garlic basil mayo and sprinkle with shredded mozzarella cheese. Close with butter sides out.

Heat a medium pan on medium heat. Cook like you would any other grilled cheese! You want the cheese to me melty and the bread to be nice and golden brown and toasty.

Slice in half and enjoy!
