This is honestly the easiest recipe and I’m pretty sure you already have these ingredients in your pantry. Let’s get started!
Make the balsamic marinade for the chicken
This is where all the flavor comes in! Grab a medium-sized bowl and add:
- 1/4 balsamic vinegar
- 2 tablespoons Dijon mustard
- 2 tablespoons fresh lemon juice
- 2 garlic cloves minced
- 2 tablespoons olive oil
- Salt and freshly ground black pepper
- 2 Chicken Breasts (You can leave the skin on if you prefer. It will crisp up nicely in the oven.)
Combine your mixture and place the chicken and the marinade into a ziplock. Marinade the chicken for 2-24 hours. The longer it marinades, the better it tastes!
Roast the balsamic chicken
This part is where your house is going to smell amazing!! Preheat your oven to 350℉. Place the chicken into a medium-sized baking dish. Add as much leftover marinade as you want. You can use the marinade and juices for basting!
Cook the chicken breasts for 30-40 minutes. Take them out of the oven and let them rest for 5-10 minutes. This will help seal in the juices.
Serve with some sides dishes or slice up as a topping for sandwiches, salads, and more!

In a bowl, mix the vinegar, lemon juice, mustard, minced garlic, olive oil, salt, and pepper.

Add your wet mixture and your chicken breasts to a container or ziplock bag. Refrigerate, turning massaging the chicken breasts occasionally, for at least 2 hours. This can marinate for up to one full day.

Preheat the oven to 400 degrees F. Put your chicken breasts into a backing dish and drizzle over with the leftover marinade. Cook for 35-40 minutes, basting with the juices occasionally.

Once your chicken is fully cooked, let rest for 10 minutes. Slice and serve.

Serve this as a main dish and garlish with some fresh herbs, or slice to add to salads and sandwiches!
