Tacos! You either love them, or you love them! Who doesn’t like tacos? They’re easy to make, delicious, and portable. They’re super versatile and can be eaten for breakfast, lunch, and dinner! SO what are we making today? Today we’re making Pork Carnitas Tacos! In fact, we’re making Hello Fresh tacos! Let’s get started!

Before we start to cook our tacos, we need to wash and prep all of our ingredients.
After all of your produce is washed, grab a cutting board to peel and cut your onion in half; finely dicing one half and finely slicing the other into strips. The sliced side will be used for pickling.
Core and deseed your poblano. Dice it into small pieces, about 1/2″ thick.
Dice your tomato and set it to the side in a small bowl. Cut your lime in half and cut one half into two wedges. Chop up your cilantro. These will be used as toppings at the end.
Cook & Assemble
Let’s get cooking, shall we?
First thing you’ll want to do is place your sliced onion in a bowl with the vinegar, sugar, pinch of salt and 1 tablespoon of water. Mix it together and let it sit. Make sure you stir it occasionally to make sure all the onions pickle evenly.
Then, heat a drizzle of olive oil on medium-high heat. Add your pork, and some salt and pepper, and cook until the meat is browned and cooked through. Spoon the meat onto a plate and set aside for later.
In the same pan you cooked your meat, add poblanos and diced onion. Cook until they are softened. Add your meat back into the pan along with your water, southwest spice blend, tomato paste, stock concentrate, 1/4 cup of water. stir it all together and let it cook until it’s thickened.
TIP: Make sure you’re scraping the browned bits off of the bottom of the pan, they add so much flavour! Set meat mixture to the side.
In a small bowl, combine sour cream, a pinch of chipotle (or as much as you want, and the juice from half of the lime. Stir it all together and slowly add water. You want to add enough water to get the mixture to a drizzle consistency.
Assemble & Eat!
Now warm up your tortillas, plate and eat! Add your meat, pickled onions, tomatoes, cheese, drizzle of the sauce you made and top it with some fresh cilantro. These pork carnitas tacos will definitely hit the spot!
- 1 Yellow Onion
- 1 Poblano Pepper
- 1/4 oz Cilantro
- 1 Roma Tomato
- 1 Lime
- 5 tsp White Wine Vinegar
- 10 oz Ground Pork
- 1 Tbsp Southwest Spice Blend* See Notes
- 1 tsp Chicken Stock Concentrate
- 1.5 oz Tomato Paste
- 2 Tbsp Sour Cream
- 1 tsp Chipotle Powder
- 6 Flour Tortillas
- 1/4 Cup Monterey Jack Cheese
- 2 tsp Sugar
- olive oil
- salt and pepper

Wash and dry all of your produce.

Halve and peel the onion. Very thinly slice one half and finely chop the other.

Core, deseed, and chop your poblano pepper. Pieces should be 1/2" thick.

Dice the tomato.

Roughly chop your cilantro.

Half the lime and cut one half into wedges.

Combine thinly sliced onion, vinegar, sugar, 1 TBSP of water, and a pinch of salt in a bowl.

Stir it until sugar and salt are dissolved and set to the side. Mix occasionally.

Heat olive oil in a large pan over medium-high heat.

Add pork and season with salt and pepper. Cook pork and then transfer it to a plate when it's cooked through.

Add the poblano pepper and diced onion to the pan, season with salt and pepper. Cook for 3-4 minutes until it's softend.

Add pork back into the pan. Add Southwest spice, stock concentrate, tomato paste, and 1/4 cup water. Cook until it's thickened, scraping the browned bits at the bottom as it cooks.

Combine sour cream, the juice from half of the lime, and a pinch of chipotle powder in a bowl. Add small amounts of water until your crema is thin enough to drizzle

Warm your tortillas and assemble your taco!

Notes: To make southwest spice blend, mix 4 parts garlic powder, and 2 parts cumin and chili powder.
