Do you ever think to yourself “I want to eat healthier but I love pizza.”  Yeah, tell me about it. I could eat pizza every day; However, my body would totally hate me if I did that. So, instead, I decided to treat myself to something just as delicious, a Mediterranean flatbread. It is light, fresh, filling, tasty, quick while being inexpensive, so that’s even better!

Prep your flatbread

Ingredients

This is so easy. Preheat your oven to 425°F, or to whatever temperature your flatbread packaging says. Once preheated, pop the flatbread in the oven for 5-7 minutes. This will depend on how crispy you like your crust, I cook mine for 7 minutes because I like it crispy. All that’s left to do is wash and chop your veggies!

Once your flatbread is out of the oven, it’s time to assemble it. That’s it, folks! It’s really that easy!

Substitutions

In order to keep this recipe quick, I opted to use a pre-made flatbread. If you would like to make one from scratch, by all means, go ahead! I applaud you if you do! I also chose to use pre-made hummus. You can buy hummus in all sorts of other flavours; However, I would recommend a roasted garlic or roasted pine nut hummus. YUM! I also decided to use goat cheese instead of feta. Don’t get me wrong, I love a good feta, but I really like the creaminess of the goat’s cheese. It’s a nice contrast to the crispy flatbread and crisp veggies. Feel free to add different toppings too. I’m not a fan of olives, but that would make a great addition if that’s your thing. Another great addition would be a balsamic drizzle on top, not only would it make a nice garnish, but it would taste great too!

Flatbread Slice

This is a go-to lunch for me. I love it because, while it fills me up, it doesn’t make me feel too full. There’s nothing worse than feeling bloated and tired when you need to go back to being productive, am I right? This would also be perfect as an appetizer at a party, just slice it up and serve!

Ingredients
  • 1 Flatbread
  • 1/4 cup Hummus
  • 2 cups Romane
  • 1/2 cup Cucumber
  • 1/4 cup Red onion
  • 1/4 cup Tomato
  • 1/4 cup Goat cheese
Instructions
  1. Preheat your oven. I’m using a pre-made flatbread, so I set my oven to 425ºF

  2. Cook flatbread in the oven for 5-7 minutes, or longer, depending on the instructions

  3. Rinse your veggies!

  4. Chop all of your veggies.

  5. Take your flatbread out of the oven and add your toppings! How easy was that?
