Half, peel, and dice the onion.
In a bowl, mix BBQ sauce, ketchup, ancho chili powder, cornstarch, 1 Tbsp of water, and beef concentrate together.
In a medium pan, heat up a drizzle of oil on medium-high heat.
Add diced onion and cook until softened. This should take 4-5 minutes.
Add the ground beef to the pan to cook with the onions. Season with salt and pepper. Cook the beef mixture for 3-5 minutes.
Add your sauce mixture to the pan and continue cooking until the sauce has thickened and the beef has cooked through. This should take another 2-3 minutes. Don't forget to season with salt and pepper.
Toast the potato buns!
Top the bottom bun with your sloppy joe mixture and top with sliced pickles. Enjoy!!
You can use regular chili powder if you cannot find ancho, but it won't taste as good and smokey.
