Preheat your oven to 425℉. Wash and dry all of your produce.
Cut potatoes into wedges. 1/2 inch thick works best. If you like thicker potatoes, cook them for longer.
Finely dice the onion, leaving 1 TBSP to the side.
After you cut your potatoes into wedges, toss them in a drizzle of olive oil, 3/4 tsp of garlic powder, salt, and pepper. Lay them on a baking sheet and bake for 25 minutes. Plan to cook them longer if your wedges are thick.
Combine 1Tbsp of diced onion with white wine vinegar, 1tsp of sugar, and a pinch of salt in a small bowl. Let this sit to pickle for 15 minutes.
Add the ketchup, sour cream, mustard, 1/4 teaspoon of garlic powder, and 1 tsp of sugar into another bowl. Mix to combine.
After the onions have pickled for 15 minutes, drain and mix the onions into the sauce mix.
Heat a drizzle of oil in a pan over medium to medium-high heat. Add the rest of the onion and cook until browned and softened. Season with salt and pepper. Place them to the side.
Form two patties and season with salt and pepper.
Heat some oil in a large pan on medium-high heat. Add your patties and cook on each side for 3-5 minutes.
Once you flip, add your cheese and let it melt.
Toast your buns.
When everything is cooked, it's time to eat! Spread the secret sauce on both buns. Top with your burger, cooked onions, and any other topping you might like!
