Preheat your oven to 350℉.
Mix together your cake ingredients.
Fill your cupcake tin with liners and add mixture.
Bake for 18-21 minutes.
With an electric or stand mixer, mix your cream and powder sugar together on high.
Once your mixture starts to thicken, slowly add your pudding mix and food colouring.
Mix until smooth and refrigerate.
Mix all of your ingredients, except for your food colouring, with an electric or stand mixer.
Divide your frosting into two bowls and add colouring to each bowl to get two different colours.
Once your cupcakes are cooled, cut a hole in the center of your cupcake.
Fill the hole with your cream filling and pop some cake back on top
Frost your cupcakes. Use a piping bag to get the swirl effect.
