Easy Cheesy Potato Casserole

Do you love cheese? Do you love potatoes? Well, this easy cheesy potato casserole is for you! As an American, there’s nothing that says “comfort food”more than a casserole. This one is a perfect side dish or to bring to gatherings and potlucks. It’s warm, filling, and super cheap and easy to make! Don’t eat meat? That’s alright, just use cream of mushroom soup instead of chicken and forget the bacon. This recipe is also easy to double if you’re feeding a large crowd!

Prep

This recipe is so simple that there’s hardly anything to prep! All you need to do is thaw your hash browns. Using them when they’re frozen will not only take longer to bake but will make your casserole dry.  Next thing you need to do is chop your onion. I like to cut them into tiny pieces, the smaller, the better! Feel free to fry your bacon at this point too, or wait, do what you want! Don’t forget to preheat your oven to 350°F!

Assemble and bake

This is so easy. Mix your thawed hash browns, diced onion, cream of chicken soup, sour cream, and cheese together in a bowl. Transfer your mixture to your baking dish and top with panko and melted butter. Pop it in the oven to bake for 30-45 minutes. If your breadcrumb topping starts to burn, cover it with tinfoil. If you didn’t cook your bacon beforehand, fry it up while your casserole bakes.

Once your casserole is done, top it with your chopped bacon and green onion and enjoy!

Ingredients
  • 1 Pound Hashbrowns small cubes and thawed
  • 1 Can Cream of Chicken Soup Cream of Mushroom if vegetarian
  • 1 Cup Shredded cheese
  • 1/4 Cup Onion
  • 1 Cup Sour cream
  • Panko breadcrumbs Topping
  • 1 Tbsp Melted butter
Toppings
  • Bacon
  • Green onion
Instructions
  1. Preheat your oven to 350℉ 

  2. Mix your hashbrowns, cheese, onion, and sour cream into a bowl.

  3. Pour your mixture into a nonstick baking pan and top with panko breadcrumbs and melted butter.

  4. Bake for 30-45 minutes

  5. While your potatoes are baking, fry your bacon.

  6. Top finished potatoes with crispy bacon and green onions!
