What was your favorite meal as a kid? Amongst the usual contenders like mac and cheese, chicken nuggets, and hamburgers, sloppy joes were also on the top ten list. I remember the first time I ever had a sloppy joe; I was sitting in my grandparent’s kitchen and my grandma whipped out a can of Manwich. As a kid, I was a super picky eater, so I was skeptical about this mystery meat mixture in a can. Long story short, it was love at first bite! I felt like Ashley Olson’s character in It Takes Two! I loved that “big, gooey, messy burger”!

How to make Ancho BBQ Sloppy Joes
These are going to become a staple in your home because they are THAT easy! Let’s get started, shall we?
Prepping your sloppy joes
Let’s start by prepping our ingredients. The first thing to do is half, peel, and dice the onion. Next, in a small bowl, mix BBQ sauce, ketchup, ancho chili powder, cornstarch, 1 Tbsp of water, and beef concentrate together and set it aside.
Cooking the sloppy Joes
In a medium pan, heat a drizzle of oil on medium-high heat. Add diced onion and cook until softened. This should take 4-5 minutes. Make sure you’re stirring the onions around so they don’t stick to the pan or cook unevenly.
Next, add the ground beef to the pan, cook with the onions, and season with salt and pepper. Cook the beef mixture for 3-5 minutes. Don’t panic, the beef may not be cooked all the way at this point but that’s ok because it will finish cooking in the next step.
Add your sauce mixture to the pan and continue cooking until the sauce has thickened and the beef has cooked through. This should only take another 2-3 minutes. Don’t forget to season with salt and pepper.
While the sloppy joe mixture is cooking, this is a great time to toast your buns! Once the buns are toasted and your sloppy joe mixture is done, top the bottom bun with your sloppy joe mixture and top with sliced pickles. Enjoy! it’s really THAT simple.
You can serve these with any side dish you want. If you don’t like pickles, coleslaw makes a great topping. Don’t like toppings? No problem, these sloppy joes are delicious on their own!
- Potato buns
- 1/2 pounds Ground Beef
- 1 Yellow Onion
- 4 TBSP BBQ Sauce
- 2 TBSP Ketchup
- 1 tsp Ancho Chili Powder
- 1 tsp Beef Stock Concentrate
- 1/2 TBSP Corn Starch
- Dill Pickle Slices
- Salt & Pepper

You can use regular chili powder if you cannot find ancho, but it won’t taste as good and smokey.
