Hi, my name is Jordan and I really, really, like pancakes.
Do you like pancakes? I think they’re delicious, easy to make, and totally customizable. The only problem I have with them is that most recipes make way more pancakes than this little lady can eat! You see, a common problem I struggle with is that recipes just make too much food! As someone who lives alone and I can’t be tempted to eat that many carbs at once. I’d love to actually, but I know I shouldn’t. It’s also struggled to find a vegan recipe that reminds me of good, old fashioned, fluffy pancakes. *Side note: I am not vegan, it’s just rare that I happen to have milk and eggs at the same time.
On my search for a good and easy pancake recipe, I stumbled upon this one from The Edgy Veg. It’s vegan, easy, and all of the ingredients are things I already have in my pantry! It still makes too many pancakes though, so I tweaked somethings, added some ingredients and here we are. Here’s what you need to make chocolate chip pancakes… drumroll please… for ONE!
Do you crave chocolate chip pancakes but are only cooking for yourself? This is for you!
- 1/2 cup flour
- 1 1/2 tsp sugar
- 1 tsp baking powder
- 1 pinch salt
- 1 handfull Chocolate chips
- 1/2 cup almond or buttermilk
- 1 1/2 tsp vinegar only if you are using plant-based milk
- 1 tbsp olive or coconut oil
- 1/2 tsp vanilla extract

If you are using plant-based milk, mix your milk and vinegar together and let it sit for 5 minutes. This will turn it into a buttermilk alternative!

Add your dry ingredients (except for the chocolate chips) into a bowl and mix.

Add of your went ingredients and mix your pancake batter up.

Add as many chocolate chips as you'd like to your batter. I'm not the fun police, add what you want!

Pour some pancake batter into a pan and cook on medium heat.

Wait for bubbles to form on the surface of the pancake and flip.

Cook for another minute or so. This will depend on the size of your pancake.

Repeat until all of your pancakes are made.

Top with butter, syrup, or whatever topping you'd like!
Chocolate Chip Pancakes Tips:
You guys, it’s literally as easy as just mixing everything together and pouring it into a pan to cook. As you can see, this recipe is super easy and customizable. If you prefer regular milk, feel free to use that instead, just don’t add the vinegar! Do you prefer blueberries, use blueberries! If you’re feeling a little wild, here’s a tip: melt some butter in the pan before you add the batter. It will make the pancake buttery and crisp up the edges. It’s super unhealthy for you, but if you were so concerned with your health you’d be looking for a smoothie recipe instead, right?
That is it! These are so easy to make that I make them at least once a week. They’re perfect for breakfast, brunch, lunch, dinner, as a snack or dessert. Are you really short on time in the mornings? No problem! Make these the night before, they’ll last in the refrigerator and won’t get soggy! Just microwave them and go!
